It sounds like you’ve run into a known bug we have with special characters. Our team are working on fixing this right now and we’ll let you know as soon as this issue is resolved.
For now, writing, then copying and pasting the characters from outside Whimsical into the table or element should work for you. I know this is less than ideal but hopefully helps in the meantime. Sorry for the trouble!
